Recipe for Cucumber Mint Raita

Cucumber Mint Raita is a quick and easy dip that takes only a few minutes to make. Cucumber and mint raita is an Indian yogurt-based dip that can be made with items that are already in your refrigerator.
1 cup shredded cucumber

2 cup plain yogurt

10 big, thinly cut mint leaves

a quarter teaspoon of cumin powder

Season with salt and pepper to taste.

Toss in some pomegranate seeds as a finishing touch.

• Place shredded cucumber in a sieve and squeeze out as much liquid as possible with the back of a spoon.
• Alternatively, place the grated cucumber in the center of a clean tea towel, wrap the towel around it, and squeeze out the excess moisture.
• In a medium mixing bowl, combine the spices and mint, then stir in the grated cucumber. Serve with pomegranate seeds and mint leaves as garnish.
